Essentially these are Anzac biscuits that we bake on Anzac Day but these cookies are requested constantly so have become a firm favourite in our household. They are so easy to make and keep well. Enjoy
Ingredients:
90 g rolled oats
150 g flour
65 g coconut
160 g raw sugar (use brown sugar for a chewy cookie)
125 g butter
2 tablespoons honey (use a strong flavoured honey or golden syrup)
2 tablespoons water
1 teaspoon bicarbonate of soda
Directions:
1. Preheat oven to 180°C.
2. Mix the oats, flour, coconut & sugar in a large mixing bowl.
3. In a saucepan over low heat met the butter, honey & water. When butter mixture is melted take of the heat.
4. Quickly mix in the bicarb to butter mixture. Be careful the mixture will froth up and expand.
5. Working quickly add the butter mix to the dry ingredients and mix well.
6. Place rounded spoons of the mix on baking trays allowing space for the cookies to expand.
7. Bake for 10-12 minutes. Transfer to racks to cool.
