Shepherd's Pie My Way

My family does not like onions or carrots, so this is a non-traditional way to make this that fits my family's tastes. Everyone in the family loves it and it is easy to make. Sometimes instead of making the mashed potatoes from scratch I use Ore-Ida frozen mashed potato cubes prepared per package directions.
Ingredients:
4 large potatoes, peeled and cubed
1 tablespoon butter
1/2 cup shredded cheddar cheese
salt and pepper
1 lb lean ground beef
salt and pepper
1 cup frozen corn
1 cup frozen peas
1/4 cup all-purpose flour
3 tablespoons ketchup
2 cups beef broth
1/2 cup cheddar cheese, shredded
Directions:
1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.
2. Preheat oven to 375°F.
3. In a large frying pan add ground beef, season with salt and pepper and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add corn, peas, ketchup and beef broth. Bring to a boil, reduce heat and simmer for 8 minutes.
4. Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish.
5. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
6. Bake for 20 minutes, or until golden brown.
