A great comfort meal that is quick and easy for a cold winters night or if you just want that go to meal that everyone will love. Freezes well also.
Ingredients:
4 large potatoes
1 tablespoon butter
1 large onion, chopped
1 tablespoon onion, finely chopped
1 cup shredded cheddar cheese
5 carrots, peeled and chopped
1 lb ground turkey or 1 lb ground beef
2 tablespoons all-purpose flour
1 tablespoon ketchup
1/4 cup worcestershire sauce
1 cup beef broth
1 tablespoon oil
16 ounces corn (optional)
Directions:
1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm. Drain and mash. Mix in butter, 1 tablespoon finely chopped onion and 1/2 cup of shredded cheddar cheese. Season with salt and pepper to taste; set aside.
2. Bring a large pots of salted water to a boil. Add carrots and cook until tender but still firm. Drain and mash.
3. Preheat oven to 375 degrees.
4. Heat oil and add remaining onions, cook until clear. Add ground turkey or beef and cook until well browned. Pour off excess fat, then stir in flour and cook for one minute. Add, ketchup, Worcestershire Sauce, and beef broth. Bring to a boil, reduce heat and simmer for five minute.
5. Spread meat mixture on the bottom of a 2-quart casserole dish. Next spread layer of mashed carrots, then corn. Lastly, spread mashed potatoes and top with remaining cheese.
6. Bake in a preheated oven for 20 min or until cheese is bubbly and golden. If frozen, sit out for about 1hr and heat for 45 minute.
