Shepherd's Pie

Ingredients:
1 (17 ounce) package hormel fully cooked meatloaf
1 (10 ounce) package frozen mixed vegetables, thawed
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
3 cups prepared instant mashed potatoes
1 cup shredded cheddar cheese
chopped fresh parsley (optional)
Directions:
1. In a large bowl, crumble meat loaf.
2. Add vegetables and soup.
3. Meanwhile, prepare mashed potatoes according to package directions.
4. Stir cheese into prepared potatoes.
5. Place meat mixture into a 10-in. deep-pie plate.
6. Top with prepared mashed potatoes.
7. Place pie plate onto baking sheet.
8. Bake at 400 degrees for 20=25 minutes or unti hot and potatoes are golden brown.
9. Sprinkle with parsley if desired.
