Shawn's Stuffed Bell Peppers |

This is my own version of my grandmother's recipe. Her's was a little bland so I add my own spicy flare to it. Ingredients:
1 lb ground chuck or 1 lb lean ground beef or 1 lb turkey |
1/2 cup chopped onion |
1/2 cup chopped bell pepper |
salt and pepper |
tabasco sauce |
worcestershire sauce |
1 (14 ounce) can diced tomatoes |
2 cups cooked rice |
garlic powder |
cajun season salt |
grated mozzarella cheese |
4 large bell peppers |
Directions:
1. wash large bell peppers, cut off the tops and core out, rinse out well,. 2. par boil pepper for a few minutes, let drain well while preparing stuffing. 3. use tops to chop up bell pepper, getting as much off them as possible. 4. brown meat with onion and pepper. season with salt, pepper, worcestershire and tabasco. 5. mix well, drain off fat. put in the tomatoes plus 1/2 can water. bring to boil. 6. add rice & mix well together. season with garlic powder and cajun seasoning to taste. 7. brush outsides of peppers with olive oil and stand on foil lined cookie sheet. stuff with mixture. 8. top peppers with cheese bake at 350* 10-15 minutes. |
