Shawn Boys Johnny Cakes

More of my down home southern cooking. Johnny Cakes have always been on Shawn's list of breakfast favorites.
Ingredients:
1 cup boiling water
1 cup corn meal
1 cup buttermilk
1 cup plain flour
3 tsp baking powder
1 tsp salt
1/4 tsp soda
2 eggs, beaten
4 tbsp bacon drippings
1 tbsp brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Directions:
1. Mix boiling water and corn meal to make a thick dough.
2. Mix buttermilk and eggs thoroughly. Add milk/egg mixture to cornmeal dough and blend thoroughly.
3. Sift together flour, baking powder, soda and salt. Add brown sugar, cinnamon and nutmeg to the dry ingredients and mix well. Add to cornmeal mixture and blend thoroughly.
4. Stir in bacon drippings. (Note: If batter is a little thick or “stiff,” add a little hot water and mix well to desired consistency.)
5. Heat griddle to 375 and grease lightly.
6. Ladle batter to make cakes approx. 4 inches diameter.
7. Serve with softened butter and sorgum molasses or a good cane or maple syrup.
8. (Note: Blackstrap molasses and sulphured molasses will spoil the flavor of Johnny Cakes
