Shallots and Mushrooms With Tarragon

An easy veggie side. Serve with a roast or grilled meat. Great for the BBQ Season :)
Ingredients:
1/2 lb dry shallot, peeled
1 tablespoon butter
1/2 lb fresh mushrooms, cleaned and halved
1 tablespoon lemon rind, chopped
1 teaspoon tarragon
1/2 teaspoon saffron
salt and black pepper (to taste)
Directions:
1. cook shallots in a pan for 10 minutes in salted boiling water.
2. remove from pan and drain well.
3. heat butter in saucepan over medium heat.
4. add shallots and remaining ingredients.
5. season with salt and pepper.
6. cover and cook over low heat for 6 to 7 minutes.
7. serve.
