Ingredients:
1/2 cup cider vinegar
1 tablespoon shallot, finely chopped
1 teaspoon dijon mustard
1 teaspoon sugar
salt & freshly ground black pepper, to taste
1/2 cup extra virgin olive oil
Directions:
1. Whisk vinegar, shallot, mustard, sugar, salt and pepper together in a small bowl.
2. Slowly drizzle in the olive oil, whisking constantly until thickened.
3. Store covered in the refrigerator for up to 2 days.
4. Bring to room temperature before serving.
