I love mushrooms for breakfast, lunch or dinner. These crispy delights are best served right away with a garlic aioli or ranch dressing as an appetizer, a side dish or as a light lunch with some tossed salad greens. Read more . Bon appetit!
Ingredients:
1lb or 500g button mushrooms
1/4 cup panko (japanese breadcrumbs) or dried breadcrumbs
2 cups olive oil (or your choice) to fry
2 tbs cornstarch
2 tbs garlic powder
1 tbs onion flakes
1 tbs red pepper flakes
1 tbs thyme, dried
2 eggs, beaten
2 tsp of your favorite hot sauce
salt and pepper to season
lemon wedges for garnish
Directions:
1. Clean mushrooms with a damp, soft towel; set aside.
2. Mix dry ingredients in a bowl and season; set aside.
3. Combine eggs and hot sauce in a separate bowl; set aside.
4. Gently heat oil in a large pan until a cube of bread turns golden.
5. Meanwhile start dipping the 'shrooms alternately in the egg mixture and the panko mix being sure to thoroughly coat each button with the crumbs. Stack on a plate and (yes), set aside.
6. Gently lower each button into the hot oil and fry evenly till golden brown being sure not to overcrowd the pan. Remove, drain and place on absorbent paper.
7. Serve hot with a squeeze of lemon...
