Ingredients:
7 1/2 ounces cooked coho salmon (15239) , net from 10 oz fresh fillets
1 cup polenta (or yellow cornmeal)
1 egg
1/2 cup water
3 tbsp. olive oil
1/4 cup sesame seeds
Directions:
1. Place the polenta on a plate.
2. Put the water in a small bowl, add the egg, and mix together.
3. Dip the fillets first in the water egg mixture and then on to the polenta. Make sure to coat both sides.
4. Place the sesame seeds onto a plate and spread them out. Press both sides of the salmon into the sesame seeds resulting in a light sesame seed coating.
5. Heat the oil in a heavy saute pan over medium heat. Add the salmon fillets and cook for 3-4 minutes on each side.
