Sesame Rice With Scallions

Ingredients:
1 1/2 cups sushi rice or 1 1/2 cups arborio rice, cooked in vegetable stock
1/4 cup sesame seeds
1 tablespoon peanut oil
4 scallions, chopped
1 teaspoon sugar
1/2 teaspoon salt
Directions:
1. In small saute pan, heat the oil over medium heat.
2. Add sesame seeds and toast until golden. Don't walk away, or they will burn.
3. Add the scallions, the sugar and salt.
4. Stir.
5. Combine with the cooked rice.
6. At this point you could add any little servings of leftovers you might have in your fridge.
7. I added some diced chicken tenders and green beans.
