Sesame Cilantro Scallion Pancakes

Ingredients:
2 cups all purpose flour
1/2 cup chopped green onions -- scallions
1/4 cup minced fresh cilantro
1 1/2 tablespoons sesame seeds -- white or black
3/4 teaspoon salt
1 cup water
2 tablespoons toasted sesame oil
for frying: -- canola or grapeseed oil
Directions:
1. In a medium bowl, combine the flour, green onions, cilantro, sesame seeds, and salt.
2. Add the water and sesame oil and mix to form dough, adding more water if necessary.
3. Transfer the dough to a lightly floured surface and divide into 4 pieces.
4. Roll each piece of dough into circles, about 1/4-inch thick.
5. In a large skillet, heat a thin layer of oil over medium heat.
6. Fry the pancakes in batches until golden brown on both sides, tuning once, about 3 minutes per side.
7. Drain on paper towels and keep warm while you cook the rest, adding more oil as needed.
8. To serve, cut the pancakes into wedges and serve hot.
