This is an amazing recipe from one of my local cookbooks. Roasted tomatoes give the shrimp sauce a deep flavor not found in bottled sauces. The tomatoes are great as a side dish, too. This is not a difficult recipe, but, some extra effort is required. Read more . WELL worth it! Roasted the tomatoes, then make the sauce. The sauce needs about 4 hours of chill time for the flavors to marry. Shrimp cakes sit in the fridge for 30 minutes before frying.
Ingredients:
**roasted tomatoes
6 ripe tomatoes, 5 diameter -- stemmed
olive oil
sherry vinegar
6 garlic cloves -- sliced thin
6 tbsp fresh thyme leaves
salt
**seriously sensatonal shrimp sauce
2 ea roasted tomatoes
3 ea garlic cloves
1/4 c bread crumbs
1/2 ea lime -- juice & zest
1 ea dried new mexico pepper -- seeded and rehydrated
1 ea roasted red bell pepper -- cored
1/2 tsp smoked spanish paprika
salt to taste
1/2 tsp ground white pepper
2 tbsps red wine vinegar
1/4 c blanched almonds

1/4 lb shrimp -- peeled
1 tbsp butter
1 pinch cayenne pepper
1/4 tsp dried thyme
1/2 ea jalapeno pepper -- minced
salt to taste
1/3 c bread crumbs
1/2 ea lime -- juice and zest
1 pinch cayenne pepper
1/4 tsp dried thyme
2 tbsp minced red onion
2 tbsp minced parsley
salt to taste
1/3 c mayonnaise
1/3 c bread crumbs
2 tbsp butter
Directions:
1. **SLOW ROASTED TOMATOES**
2. Heat oven to 350F.
3. Remove hard stem for each tomato then cut in half horizontally (not top to bottom).
4. Arrange halves on an edged, foil-covered baking sheet.
5. Drizzle generously with olive and lightly with vinegar.
6. Sprinkle with garlic, thyme, and salt.
7. Cook for three hours. (The oil and juice in the bottom of the pan is great on salads.)
8. **SERIOUSLY SENSATIONAL SHRIMP SAUCE**
9. Place nuts in a food processor and process until well ground.
10. Add remaining ingredients process until smooth.
11. Adjust consistency of sauce by adding olive oil if too thick.
12. **SERIOUSLY SENSATIONAL SHRIMP CAKES**
13. Heat skillet over medium heat, add butter and swirl to melt.
14. Add shrimp, cayenne, thyme, jalapeno, and salt.
15. Cook shrimp for 1 minute, flip and cook another minute.
16. Remove skillet from heat.
17. Cut shrimp up into fingernail-sized pieces (do not clean skillet). Scrape butter/thyme/jalapeno remaining in skillet into a bowl.
18. Add shrimp, 1/3 cup bread crumbs, lime juice and zest, cayenne pepper, thyme, red onion, parsley, and salt and mix.
19. Add mayonnaise and mix in thoroughly.
20. Form shrimp mixture in to two patties on a sheet of waxed paper. Sprinkle with half of remaining bread crumbs and pat.
21. Turn patties over and coat side and edges with remaining bread crumbs.
22. Refrigerate patties for 30 minutes.
23. Clean skillet and heat over medium heat.
24. Add 2 tablespoons butter and swirl to melt.
25. Cook patties until browned on one side, about 3 minutes, flip and cook until the other side is browned.
