Semi-Healthy Mac & Cheese

This is adapted from Low Fat Mac and Cheese by mickeydownunder. Using soy milk makes it creamy and a bit of margarine helps save the flavor.
Ingredients:
12 ounces pasta
1 1/2 cups cheese, shredded
2 cups plain soymilk
1 1/2 tablespoons plain flour
2 tablespoons margarine
2 teaspoons dijon mustard
1/4 teaspoon black pepper
1/2 teaspoon sea salt
Directions:
1. COOK pasta and DRAIN; keep warm.
2. In same saucepan, ADD milk and flour and WHISK until smooth; heat to BOIL stirring all the time to make sure does not stick. Add margarine and stir until melted.
3. ADD mustard and black pepper.
4. Once at a boil, allow to simmer about 3 minutes til thickened slightly. Remove from heat.
5. ADD cheese stirring until totally melted.
6. ADD pasta back into saucepan; stir until well coated.
7. ENJOY!
