A light way to have that yummy Alfredo Sauce over long fettucine noodles and some seafood on your fork. MMMMmmmm. My dear sister, I hope you like this one. This makes a big pot, so invite some friends over to try it. This recipe is light, so if you are looking to add some inches to your waist, this is the wrong recipe. Also, if you are not a seafood fan, you could substitute chicken for the seafood and make Chicken Alfredo instead. If you can buy your seafood fresh, use it the same day or at the latest the next day. If you buy frozen, remember to thaw out in the fridge the day before. Just follow the directions on the bag. To complete your meal add a salad, broccoli on the side, and some crusty bread.
Ingredients:
1 lb fettuccine pasta
1 1/2 tablespoons butter
1 cup green onion, chopped
4 garlic cloves, minced
1 lb medium shrimp, peeled (i take the tail off too)
1 lb sea scallops (fresh or frozen, thawed)
2 cups half-and-half cream (found in the milk section)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb crabmeat, shell pieces removed (can be imitation)
3/4 cup fresh parmesan cheese, shredded, divided
1/4 cup fresh parsley, chopped
Directions:
1. 1. Cook pasta according to package directions, omitting salt and fat. Drain.
2. 2. While pasta cooks, melt butter in a 12 inch nonstick skillet over medium high heat.
3. 3. Add onions and garlic; saute 1 minute or until tender.
4. 4. Add shrimp and scallops; saute 3 minutes or until done.
5. 5. Reduce heat to meium low. Add half-and-half, salt, pepper, and crabmeat.
6. 6. Cook 3 minutes or until thoroughly heated, stirring constantly (do not boil).
7. 7. Sprinkle 1/2 cup cheese over seafood mixture, stirring constantly.
8. 8. Cook 1 minute, stirring constantly.
9. 9. Remove from heat.
10. 10. Combine pasta and seafood mixture in a large bowl.
11. 11. Top with 1/4 cup cheese and parsley.
