Golf ball-sized Seckel pears were included in our CSA box recently and tasted delicious in this easy to make sandwich. Feeling adventurous? Try adding a slice of crisply cooked bacon to the sandwich as a garnish . ;) Best quality bleu cheese is very important! Sandwich was served wit this: Caldo De Hongos. From .
Ingredients:
1 seckel pear, stemmed, sliced and cored (skipped peeling, too difficult)
1 slice rye bread (we tested the sandwich with dark russian rye bread) or 1 slice grain bread, your choice (we tested the sandwich with dark russian rye bread)
1 tablespoon mayonnaise
2 tablespoons blue cheese, crumbled (good quality!)
baby spinach leaves, romaine (we tried arugula) or baby arugula (we tried arugula)
1 tablespoon chopped walnuts
1/2 slice bacon, crispy cooked (regular or candied see agave glazed bacon or smoky tempeh bacon for ex) or 1/2 slice tempeh bacon (regular or candied see agave glazed bacon or smoky tempeh bacon for ex)
fresh cracked black pepper
Directions:
1. Blend mayonnaise with 1 tablespoon bleu cheese until well mixed. Spread the mixture evenly over the bread.
2. Place greens on bread. Arrange pear slices on top.
3. Sprinkle remaining bleu cheese and walnuts on top. Run under the broiler, watch carefully, until the cheese has just melted and walnuts begin to toast, about 1 minute *but not much longer than that*!
4. If desired, garnish with half a slice of bacon.
5. Add a few turns of the cracked black pepper.
