Seasoned Chicken With Beans and Rice

Delightfully simple, filling, and guilt-free main dish. A step up from plain, boring chicken breast without having to do anything extravagant.
Ingredients:
cooking spray
1/2 cup green onion, chopped
1 teaspoon garlic, minced
1 1/2 cups chicken broth
2 tablespoons all-purpose flour
3 cups frozen mixed vegetables
15 ounces kidney beans, rinsed and drained
1 cup chicken, shredded
1 teaspoon rosemary
1/2 teaspoon thyme
1/8 teaspoon ground red pepper
2 cups brown rice, cooked
Directions:
1. Spray large skillet with cooking spray. Saute green onions and garlic for 1 minute.
2. Whisk broth and flour together in medium bowl, add mixture to skillet.
3. Add frozen vegetables, beans, chicken, rosemary, thyme and red pepper. Bring to a boil, reduce heat and simmer, covered for 6 minutes or until veggies are tender.
4. Serve over cooked brown rice.
