  1. The marinade:.
  2. Mix the thyme, lemon juice, garlic and olive oil together.
  3. Rub the marinade into the tuna steaks and set aside.
  4. The dressing:.
  5. Gently heat the sugar and water in a small saucepan into the mixture dissolves into a syrup.
  6. Blend together the chopped tomatoes and chili.
  7. Sieve the tomato paste and place in a saucepan before adding the syrup you made earlier.
  8. Cook briskly until reduced to a thick syrup.
  9. Set aside to cool.
  10. The salsa:.
  11. Mix together the arugula, capers, tomatoes and parsley.
  12. Preheat a griddle and place the tuna on the hot griddle pan and cook for 2 minutes on both sides.
  13. Place the griddled tuna in the centre of a serving plate and spoon most of the tomato dressing over the tuna steaks.
  14. Spoon the marinade and the remaining dressing round the edge of the plate.
  15. Top the tuna with the salsa.
