My hubby and I love this soup for lunch. Lots a veggies in this one too.
Ingredients:
1 teaspoon olive oil
1 medium onion, diced
4 stalks celery, sliced
3 medium carrots, diced
2 medium potatoes, diced
1 (142 g) can baby clams, with juice
1 (120 g) can crabmeat, with juice
4 cups chicken stock, low fat, low sodium
2 cups half-and-half cream
salt and pepper
Directions:
1. 1. Place veggies in a large pot with olive oil. Sautee over medium heat to get the veggies softened a little. (About 5 minutes.).
2. 2. Add clams and crab meat. Stir to blend.
3. 3 Add liquids. Simmer for about 20 minutes, until veggies are cooked through. Serve.
