Super quick and easy seafood lovers delight. Serve over white or brown rice.
Ingredients:
1 (14 ounce) mixed seafood (octopus, squid, shrimp, clams and mussels- available at walmart)
1 (15 ounce) canned boneless skinless salmon (trader joe's)
2 large chicken bouillon cubes (knorr extra large cubes)
1 (14 1/2 ounce) can diced tomatoes
3/4 cup rotel (diced tomato and green chili- season to taste for spicier)
4 -6 leaves kale, chopped
1 (10 3/4 ounce) can tomato soup
1 teaspoon garlic powder or 1 tablespoon fresh garlic
1 teaspoon onion powder
1 teaspoon turmeric
1/2 teaspoon cumin
salt and pepper
Directions:
1. Start seafood mix and salmon with the diced tomatoes and Rotel in large pot over medium heat. Add 3 cups of water, chicken bouillon cubes, and spices. Add tomato soup and chopped kale and simmer for 10 minutes. Add more water if necessary. Season to taste. Serve over brown or white rice.
