Seafood and Saffron in Orzo

Seafood/Saffron
Ingredients:
1/2 lb orzo
3 tablespoon olive oil
1 cup onions, diced
3 cloves garlic, minced
1 tablespoon saffron
1 lb albacore
1/2 lb shrimp
1/4 lb scallops
1 lb crab
1/2 cup parsley, fresh, chopped
1/4 cup white wine
1/2 cup red bell pepper
1/2 cup white mushrooms
Directions:
1. place saffron strands in warm water and soak
2. prepare orzo very al dente
3. pre-heat oven to 400
4. pre-heat pan, add olive oil, garlic and onions, saute until translucent
5. drain orzo and place in oven-safe pan
6. mix in parsley
7. arrange cubed albacore steaks, shrimp and crab on top of orzo
8. roast until begins to brown
