This easy seven-minute frosting based recipe is always a hit, and very versatile. I really like it on devil's food cake with a drizzle of super dark chocolate. I can't remember the title of the cookbook where I originally learned this recipe, and it was my mom's.
Ingredients:
2 egg whites
11/2 cups dark brown sugar
⅓ cup water
1 teasp vanilla
Directions:
1. Stir together egg whites, sugar and water together in top of double boiler.
2. With water boiling in bottom of double boiler, beat with electric mixer approximately 7 minutes or until frosting looks fluffly and holds soft shape.
3. Remove from water, add vanilla and beat until frosting forms stiff peaks. Don't over-cook, it will become grainy.
4. Use to frost.
