Directions:

  1. Drain corn well. Place in bowl
  2. Add Avocado, onion, and carrots
  3. Coat well with dressing, more or less as desired
  4. Cover and let stand in fridge for at least an hour
  5. Serve with all your summer meals
  6. Hint: For every 2 cans of Mexican Corn use 1 Avocado
