Ingredients:
1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1 1/2 tablespoons dried red pepper flakes
2 garlic cloves, minced
2 cups diced tomatoes
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon paprika
1/4 teaspoon salt
1 (14-ounce) can quartered artichoke hearts, drained
Directions:
1. Heat oil in a large nonstick skillet over medium-high heat. Add shrimp, pepper flakes, and garlic; sauté 3 minutes. Add remaining ingredients; cook 3 minutes, stirring frequently, or until shrimp are done and mixture is thoroughly heated.
