This soup is perfect on a cold rainy day. For a little something extra serve in a bread bowl or with your favorite crusty bread. Also makes for a great first course to a fancy meal.
Ingredients:
4 tbs butter
4 tbs finely chopped onion
4+ tbs of flour
2 chopped up/grated chicken bollion cubes
1 pound salmon filet
1 1/2 cups heavy cream or whole milk plus some extra, divided
3/4 cups chicken broth
2 tbs of teriyaki sauce
1 tbs of each: dill weed, paprkia, white pepper
salt to taste
for something extra serve in 2 bread bowls. if you don't have bread bowls then serve with your favorite crusty bread.
*** i use 2 of the individually packaged frozen salmon, defrosted. you could also use 2 cans of salmon, drained.
Directions:
1. 1.) In a large sauce pan melt butter and saute onions till browned over a medium heat. While that is cooking dice the salmon.
2. 2.) Once the onions are browned, add the flour and the grated chicken bollon cubes. Mix well.
3. 3.) Add the heavy cream, salmon, chicken broth, and spices. Cook until the salmon is done, approximently 10 minutes. (Add as needed additonal chicken broth to thin the bisque or flour to thicken the bisque to reach the consistency your family likes). You will need to stir this regulary to avoid it sticking to the bottom of the pan.
4. 4.) Stir in the teriyaki sauce and allow to cook for 1-2 two minutes longer.
5. 5.) Serve in bread bowls
6. 6.) Enjoy!
