Great dish for breakfast ot anytime. We often have it for dinner with toast, just like scrambled eggs!
Ingredients:
1 tbs oil
1 tbs butter
1/2 tsp turmeric for color (optional)
1 block firm or extra firm tofu, crumbled into med/lg size chunks
salt and pepper to taste
optional additions
sauteed onions
chopped vegetarian hot dog pieces
most other things you'd like in an omelet or scrambled egg dish
you can even add a cage free egg or two if you'd like it more eggy and you're vegetarian, not vegan
Directions:
1. Heat oil and butter in a skillet over medium heat.
2. Add rest of ingredients, stir well.
3. Season to taste.
4. Cook 5-6 mins or til eggs if you add them are cooked through.
5. Delicious served with toast or accompanying any breakfast fare.
6. Great for a really quick dinner!
