Easy, healthy, and delicious! I adapted a recipe I initially found on a box of oats. I've improved the initial recipe by changing many of the ingredients and measurements. You can substitute for many of the ingredients, but please don't substitute anything else for the butter!
Ingredients:
1 cup flour
1/2 cup oat flour
1/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup butter (1/2 stick)
1/3 cup raisins (optional) or 1/3 cup currants (optional) or 1/3 cup chocolate chips (optional) or 1/3 cup dried cranberries (optional)
1/3 cup soymilk
1 egg, beaten
1 tablespoon sugar
Directions:
1. Preheat the oven to 400 degrees. Grease a large cookie sheet.
2. Put first eight ingredients (up to raisins) into a large bowl. Cut with a fork until the mixture resembles coarse crumbs.
3. Add egg and milk to mixture. Stir until just moist.
4. Drop spoonfuls of dough onto cookie sheet forming large piles. You should end up with 10-12 scones spaced about one inch apart. Sprinkle with sugar.
5. Bake for 12-15 minutes or until the scones start to turn golden on the edges.
