This recipe is obviously not an original, but I just had to share this fave of ours. I got this recipe from my best friend who is now living on the other side of the country in Maine. Occasionally we will make these and talk on the phone with coffee mugs in hand & share a plate of Scotch-a-Roos. Read more . It makes the distance a little shorter for us.....
Ingredients:
1c. corn syrup
1c. sugar
1c. peanut butter
6c. rice krispies
1 6oz pkg (1c.) milk chocolate chips
1c. butterscotch chips
Directions:
1. STEP 1 - Combine corn syrup and sugar in 3qt saucepan. Cook over med heat, stirring frequently. When sugar dissolves and mixture begins to boil, remove from heat. Stir in peanut butter and mix well until melted. Add Rice Krispies, stirring to thoroughly coat the Rice Krispies. Press mixture into a 13x9x2 baking dish previously sprayed with non-stick cooking spray. Try to keep top of mixture level.
2. STEP 2 - In seperate sauce pan, melt milk chocolate chips and butterscotch chips over low heat. Mix well. Pour melted chocolate mixture over the Rice Krispy mixture in pan. Let stand until cool or firm, aprox 2 hours.
3. Cut into squares and ENJOY!
