Schiacciata – Italian Grape Bread

Delicious Italian Grape Flatbread
Ingredients:
3 cups white bread flour, plus extra for kneading
2 tbsp sugar
1 packet yeast, (10g)
3 ml salt, plus extra for seasoning
1 cup warm water
60 ml avocado oil, plus extra for drizzling (replace avocado oil with olive oil if you prefer)
500 grams red grapes, or black grapes
2 sprigs rosemary, stems removed
1 grinding milled pepper
Directions:
1. Makes 1 large 30-40cm flatbread
2. 1 Mix dry ingredients in a bowl and make a well in the centre.
3. 2 Pour water and oil into the centre. Mix to form a dough.
4. 3 Tip dough onto a floured surface. Knead for about 10 minutes or until dough is smooth and elastic.
5. 4 Place dough in an oiled bowl and loosely cover with a tea towel and allow to rise until doubled in size.
6. 5 Preheat oven to 200°C.
7. 6 Knock back dough and press into a greased roasting pan.
8. 6 Lightly crush half of the grapes (to let the juices soak into the dough).
9. 7 Scatter remaining grapes on top and push into dough using your fingers then scatter over rosemary and drizzle with a little oil and season.
10. 8 Bake for 30 minutes or until cooked through and golden.
