A very delightful cherry cake sure to please all cherry lovers. A very old recipe normally made around Christmas time and orginally baked ina Santa Claus cake pan !
Ingredients:
5/8 cup shortening ( a heaped half a cup )
1 1/2 cups sugar
3 cups flour
3 tsp baking powder
1/4 cup chopped nuts
1 1/4 tsp almond extract
1/2 cup maraschino cherries, quartered
1/2 tsp salt
1/3 cup maraschino cherry juice plus 2/3 cup milk
5 egg whites beaten
Directions:
1. Stir shortening in bowl to soften.
2. Sift all dry ingredients together 3 times and combine to shortening.
3. Add extract and beat for 2 minutes..
4. Mix in cherries and nuts and fold in beaten whites last.
5. Grease and flour a 8 or 9 inch cake mold or suitable pan.
6. Pour in batter and bake 370F for one hour or tested done.
7. Cool in pan 15 minutes and remove to platter.
8. When cool, decorate as desired.
