This pizza is delicious, hense the name. My husband insists on having homeade pizza weekly so we both came up with this pizza. We love pizza and shrimp scampi comes in second.
Ingredients:
2 1/2 cups self rising flour
1 tablespoon yeast (self rising)
3/4 cup warm water
1 teaspoon sugar
1 tablespoon olive oil
1 cup alfredo sauce (paul newman's)
3/4 lb shrimp (shelled and deveined)
3 garlic cloves (chopped)
1 teaspoon red pepper flakes
1/4 cup italian parsley (chopped)
2 tablespoons unsalted butter
2 tablespoons olive oil
1 tablespoon capers
8 ounces white cheddar cheese (shredded)
1/2 cup parmesan cheese
Directions:
1. For the dough dissolve the yeast and sugar in the warm water and let stand until foamy. Place 2 cups of flour in a bowl and add to the yeast mixture. Stir until incorporated. Place remaining 1/2 cup of flour on working surface and and knead out the dough for about 5 minutes. Place olive oil in a clean bowl and add the dough ball, coating each side. Cover and let rise for about 2 hours.
2. Preheat oven to 450 degrees. Meanwhile roll dough out onto a well seasoned pizza stone. Place in oven and bake for 5 minutes. Remove from the oven and let cool for 10 minutes. Once the dough has cooled add the alfredo sauce, parmesan cheese and then the white cheddar. Place back into the oven and bake for 15 minutes.Ten minutes into baking place olive oil and butter in a skillet and heat until hot. Add the shrimp, garlic and red pepper flakes and saute until the shrimp is pink. Add capers to the shrimp mixture. Take pizza out of oven and top with the shrimp mixture and bake for another 5 minutes. Remove from oven and sprinkle with the parsley. Enjoy!
