Scallops With Chourico

An easy starter
Ingredients:
1/2 lb portuguese chourico sausage
1 lb small scallops
1/2 lemon, juice only
2 tbsp green onion, chopped
fresh parsley to garnish
Directions:
1. Slice chourico into 1 inch rounds.
2. Place a pan over medium heat and fry chourico without adding any oil.
3. Remove chourico and transfer to a bowl. In the same pan, fry the scallops in the oil left by the chourico for about a minute on each side.
4. Return chourico to the pan, add lemon juice and green onion, fry another 2 minutes.
5. To serve; place chourico and scallops onto a serving dish (or 4 individual ones) and sprinkle with fresh chopped parsley
