Ingredients:

Directions:

  1. Stir fry apples, onions, bell pepper and pea pods in 1 tablespoon oil over medium high heat until crisp-tender; about 3 minutes. Remove from pan.
  2. Stir fry scallops in wok, in remaining oil until cooked and opaque, about 4 minutes.
  3. Stir in combined cider, cornstarch and soy sauce and cook until mixture boils and thickens, 1-2 minutes.
  4. Stir in apple mixture; heat to boiling. Season to taste with salt and pepper.
