This recipe oringinaly called for the scallops to be baked in pastry, but I found it perfect for linguini.
Ingredients:
1 tablespoon butter
1/2 lb mushroom, quartered
1/2 cup dry white wine
1 tablespoon chopped shallot
1 tablespoon chopped parsley
3/4 lb bay scallop
3/4 cup thick white sauce
1/2 cup grated parmesan cheese
12 -16 ounces cooked linguine
1 tablespoon butter
1 1/4 tablespoons flour
1 1/4 cups hot milk
1/4 cup onion, minced
1/4 teaspoon clove
1/4 teaspoon nutmeg
Directions:
1. Heat butter in skillet.
2. Add mushrooms, wine, shallots, cheese and parsley.
3. Cook over medium heat for 3-4 minutes,.
4. Stir in scallops and continue cooking 2 minutes.
5. Pour in white sauce; season and cook 1 minute.
6. Serve over cooked linguini.
