These are the potatoes I make with my Coke ham for Christmas, Thanksgiving and/or Easter. They are very good and easy to play around with the flavours and try different cheeses. Hope you like them!
Ingredients:
4 pounds potatoes, peeled and sliced thin
1 cup (packed) grated extra-sharp cheddar cheese
1 cup (packed) crumbled danish blue cheese
1/2 cup (packed) freshly grated parmesan cheese
1 1/2 tsp. salt
1/2 tsp. ground black pepper
1 large onion, chopped
3 tbsp. flour
4 tbsp. butter
3 cups whole milk
Directions:
1. Preheat oven to 400F. Lightly butter a 13x9 inch baking dish.
2. Mix cheeses in a small bowl.
3. Arrange half of the potatoes in the baking dish, overlapping slightly. Sprinkle with half of the salt and pepper. Sprinkle the onion over the top and then the flour.
4. Dot with 2 tbsp. butter.
5. Sprinkle half of the cheese mixture over top.
6. Top with remaining potatoes, the remaining salt and pepper and the remaining 2 tbsp. of butter.
7. Reserve the remaining cheese.
8. Pour milk over the potatoes.
9. Cover the baking dish.
10. Bake for 45 minutes.
11. Uncover the dish and sprinkle with remaining cheese.
12. Bake uncovered for approximately another 45 minutes until the potatoes are tender and the cheese is deep golden brown.
13. Remove from oven and let stand 15 minutes prior to serving.
