Scalloped Potatoes With Ham

Early on in my marriage, I had tried making scalloped potatoes several times. The results were less than favorable because even after baking for what I considered forever, the potatoes were never done. Eventually, at my sister-in-law's wedding reception, her father-in-law made the scalloped potatoes. Read more . He told me to boil the potatoes prior to assembling the casserole, rather than baking them in the casserole, and I've never had a disaster since.
Ingredients:
5 large baking potatoes
1 large vidalia onion, julienned
4 cups medium white sauce (made with the vidalia onion)
1 lb smoked ham, diced
mrs. dash seasoning®, to taste
salt, to taste
fresh ground black pepper, to taste
1 small can, french’s french fried onions
Directions:
1. Boil potatoes in a large saucepan until done. Drain and allow to cool enough for handling.
2. Potatoes should peel easily... then quarter lengthwise and slice crosswise.
3. In a very large mixing bowl, combine potatoes, ham, seasonings (use a light hand) and white sauce. Check seasoning and adjust if necessary.
4. Pour into a sprayed or greased 3-quart casserole. Bake in a preheated 350°F oven for 45 minutes, or until surface of mixture is lightly browned.
5. Scatter French Fried Onions evenly over surface and return to oven for 15 minutes.
6. Serve with salad or cooked veggie.
