Delicious and decadent potato side dish that can also be used as the main course. I found this in the Marlboro Country Cookbook called Morning Fires, Evening Lights (Philip Morris, Inc, 1998) that a friend got by saving up the Marlboro Cigarette Points years ago. Read more . Ingredients:
scalloped potatoes
6-8 med baking potatoes
1 med onion, thinly sliced
1 red and/or green bell pepper, thinly sliced, optional
2 cups shredded processed cheese
2 cups shredded natural cheese
black pepper
1 cup half and half
Directions:
1. Wash, trim, and thinly slice potatoes. No need to peel. There should be about 6 cups.
2. Butter a 2 1/2-3 quart casserole. Layer sliced potatoes, onion, peppers, mushrooms and cheese in casserole.
3. Sprinkle each layer with cracked pepper. Continue until all vegetables and cheese are used.
4. Slowly pour half & half over all. Cover and bake until potatoes are tender and cheese is browned, about 30 mins.
