Scalloped Oysters

This is a great turkey or chicken stuffing replacement. Although it also goes great with fish such as king or spanish mackerel, or so dolphin (mahi-mahi)
Ingredients:
1 pint (or more) of oysters (fresh shucked and salty are best)
6 tablespoons of cream (i use the heavy)
1/2 cup dry bread crumbs
1 cup cracker crumbs
1/2 cup melted butter
salt/pepper to taste
optional ( red pepper) if u like it spicy
optional (celery, thinly sliced)
Directions:
1. Drain Oysters
2. Combine oyster liquid and butter
3. Grease a 1-1/2 quart baking dish
4. Combine together cracker and bread crumbs
5. Place a layer of crumbs in bottom of baking dish then layer with oysters.
6. Salt and pepper to taste (optional: sprinkle with red pepper and celery slices) and 1/2 butter/oyster liquid.
7. Repeat layering until oysters and crumbs are used ending with crumbs on top.
8. Dot the top with some melted butter.
9. Bake 400 degrees for 20 minutes
