Ingredients:
1 tbs smart balance
1/2 cup sliced onion
1/2 cup sliced zucchini
1/2 cup sliced red bell pepper
2 small plum tomatoes, diced
1 tbs chopped fresh basil
1/2 cup egg whites
1/2 cup 1% cottage cheese
1/4 cup fat-free evaporated milk
3/4 oz shredded monterey jack cheese
Directions:
1. saute veggies in ovenproof skillet in butter
2. blend egg, milk & cottage cheese in blender
3. add to veggies until bottom is set
4. place in broiler for 2-3 minutes then add cheese till it melts
