Savoury Sweetcorn Bread

So easy and quick, especially when you have unexpected extra guests for evening tea. Serve buttered slices while still warm from the oven.
Ingredients:
2 cups self-raising flour
2 dessert spoons oil
2 eggs - beaten
salt to taste
1 425g tin sweetcorn
paprika
Directions:
1. Sprinkle paprika onto sides & bottom of microwave bread pan.
2. Mix self-raising flour, oil, eggs & salt in a bowl.
3. Mix in the sweetcorn - thoroughly.
4. Empty mixture into prepared microwave loaf/bread pan.
5. Microwave on DEFROST for 9 min.
6. Microwave on HIGH for 6 min.
7. Notes: Silicon bread pans work a treat. They are totally non-stick, and the bread drops out easily. However, I still oil the breadpan with a drop of olive oil. (My preference).
8. Microwave strengths vary. Test with a skewer into the bread when you think it’s ready. Remember that cooking continues for a couple of minutes after you remove it from the microwave therefore it must not be left to dry out in the microwave oven.
