Savoury Sweet Glutinous Sticky Rice

A favourite dimsum item is steamed sticky rice wrapped in lotus leaf. This stovetop version does not require steaming or any lotus leaf but is just as sumptuous and tasty. Serve with Chinese brocoli on the side and you have a light super.
Ingredients:
2 cups glutinous or sweet sticky rice
8 shiitake mushrooms, small diced
reserve shiitake mushroom liquid
4 chinese sausages, diced
6 dried shrimp, rehydrated and diced
1 tbsp vegetable oil
2 tsp fresh ginger, minced
1/3 c green onions, sliced
1/4 c sherry or rice wine
2 tbsp light soy sauce
2 tbsp oyster sauce
2 tsp sesame oil
1/2 tsp salt
1/2 tsp white pepper
1 1/3 c chicken stock
Directions:
1. Rinse rice a few times. Cover rice with cold water at least 1 inch over the top of the rice and soak at least 4 hours or overnight.
2. Drain and rinse with cold water until water runs clear.
3. Drain and set aside.
4. Heat a large non-stick pan. Add oil, ginger and green onions and stir-fry til fragrant.
5. Next add sausage and stir-fry 1-2 minutes until some of the oil has been released.
6. Then add mushrooms and stir-fry 1 minute.
7. Stir in sherry, soy sauce, oyster sauce, sesame oil, salt, and white pepper and remove from heat.
8. Add drained rice and shrimps, and stir to coat.
9. Next add broth and bring to a simmer, stir once, then reduce heat to low. If rice appears dry, add some mushroom liquid, a couple tablespoons at a time.
10. Cover and cook 20 minutes, then remove from heat.
11. Stir to distribute ingredients and let stand, covered, 5 minutes before serving.
