Ingredients:
1 large onion, sliced
1 garlic clove, minced
1/4 cup parsley, minced
2 teaspoons salt
1/4 teaspoon each pepper,ground thyme and ground sage
2 tablespoons oil
1 pound green or wax beans, cut
3 large tomatoes, diced
2 cups diced yellow (or green) squash
Directions:
1. Cook onion, garlic, parsley and seasonings in oil in large

3. Add remaining ingredients. Add water to half the depth of mixture.
4. Cover and simmer 20 minutes or until beans are tender.
