From the supermarket guru for this delicious sweet potato recipe flavored with coffe and baked in oranges! differently delicious!
Ingredients:
1/2 cup hazelnut coffee, brewed
1/2 cup golden raisins
1 can sweet potatoes, mashed (29 oz.) or bake and mash 6 large sweet potatoes ( or pumpkin or winter sqaush )
2 teaspoons baking powder
1/4 cup fresh butter
1/2 cup brown sugar
1 tablespoon grated peel of a large orange
1/2 cup chopped hazelnuts
1 teaspoon ground cinnamon
1 tablespoon granulated sugar
4 large oranges
Directions:
1. Preheat the oven to 350°F.
2. Brew the coffee then pour it over the raisins in a large bowl and allow to sit until the raisins absorb the coffee and plump up.
3. At that point, add the potatoes, baking powder, butter, brown sugar, hazelnuts, and cinnamon and stir together.
4. Cut each orange in half, then scoop out the pulp and set that aside for another use.
5. Into the empty orange shells, add the mixture into the oranges lightly (the baking powder allows them to expand a bit while baking.)
6. Sprinkle with the granulated sugar, then place them in a Pyrex or metal pan and heat for about 20 minutes.
7. NOTE: Original Blend can be substituted for Hazelnut Coffee, and pecans are a good alternative to hazelnuts if they're not easily found in your area.
