Sandy Miller from Birmingham gave me this recipe. I love squash and like having different ways to prepare it. It is great for a potluck, but be ready to give out the recipe. Ingredients:
12 large yellow squash, sliced |
1 large onion, sliced |
8 ounces sour cream |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 1/2 cups cheddar cheese, shredded |
2 cups ritz crackers, crushed |
3 tablespoons melted butter |
Directions:
1. Boil squash and onion until tender. 2. Drain. 3. Mix seasonings, sour cream, and cheese with squash and onions. 4. Pour into greased baking dish. 5. Mix crushed crackers and melted butter and put on top of squash. 6. Bake at 350 for about 30 minutes or until bubbly. |
