Savory Shire Pudding

A simple pudding for meats that many in the shire can enjoy. :) Good for dinner, breakfast, second breakfast, or whenever.
Ingredients:
1 cup milk
2 eggs
1 cup flour
1/2 teaspoon salt, to taste
1 tablespoon butter, melted
3 tablespoons lamb or beef drippings (generous tablespoons, and don’t forget the tasty browned bits)
Directions:
1. Preheat oven to 425 degrees F.
2. In a blender, mix together the milk, eggs, flour, and salt.
3. Melt together the butter and meat drippings, then pour them into a 9-inch glass pie plate and tilt the plate around so that the fats line the bottom and slightly up the sides of the plate, but that so the majority of the fat remains in the middle.
4. Pour the pudding batter into the middle of the pie plate.
5. Bake the pudding in a 425 degree F oven for 15 minutes, then reduce the heat to 350 degrees F and continue baking until the pudding rises and it’s puffy and golden brown.
6. Serve and enjoy!
