Savory Mushroom and Barley Soup

Ingredients:
3 cups water
1 (14 ounce) can diced tomatoes
3/4 cup chopped onion
3/4 cup chopped celery
3/4 cup chopped carrot
1 teaspoon dried savory
3/4 teaspoon crushed fennel seed
2 cups sliced mushrooms
1/2 cup quick-cooking barley
salt and pepper
Directions:
1. Combine all ingredients except barley, salt and pepper in slow cooker.
2. Cover and cook on high 4-6 hours, adding barley during the last 30 minutes. Season to taste with salt and pepper.
3. Variation: add 2-3 cloves sliced garlic, omit barley and add 3 cups torn kale during last 15 minutes of cooking.
4. Variation: add 2 cloves minced garlic, 1-2 tablespoons maple syrup and 1 15 oz can white beans, omit barley.
