This makes a wonderful side dish or if you desire, add cooked shrimp for a main dish. Personally, I love it just by itself with a salad.
Ingredients:
6 slices bacon
1 medium onion, chopped
1 medium green pepper, chopped
2 cloves garlic, minced
1 (16 ounce) can crushed tomatoes
1 (8 ounce) can tomato sauce
3 teaspoons creole seasoning
1/2 lb kielbasa, chopped
1 cup uncooked rice, , cooked and cooled
Directions:
1. Fry bacon until crisp and remove from pan and crumble.
2. In remaining bacon fat, saute onion, green pepper and garlic until tender Add Creole seasoning and cook another 2 minutes.
3. Add bacon, Kiebasa, tomatoes and tomato sauce and simmer for about 1 hour.
4. Start with part of rice and mix with sauce and keep adding rice until all is mixed in well.
5. Put in 9x13 pan and cover and bake at 350 for about 30 to 40 minutes.
