Sautéed Zucchini With Garlic, Chili and Basil

Crisp zucchini get a chili-garlic kick and a scattering of pungent basil in this fast and flavoursome recipe.
Ingredients:
3 zucchini
2 tablespoons olive oil
3 garlic cloves, finely chopped
1 chili pepper, seeded and finely chopped
12 leaves basil, finely sliced
salt & freshly ground black pepper
4 tablespoons parmesan cheese, freshly grated
Directions:
1. Cut the zucchini in to slices at a slight angle.
2. Heat the olive oil in a large frying pan and fry the zucchini slices for about 2 minutes.
3. Add the garlic and chili and fry a further minute.
4. Sprinkle in the basil, season well with salt and freshly ground black pepper.
5. Transfer the zucchini to a warmed serving dish and scatter over the grated Parmesan. Serve immediately.
