Sauteed Swiss Chard and Corn

Sauteed Fresh Red Swiss Chard, Fresh Yellow Corn and Maple Flavored Bacon are brought together to complete this side dish. The fresh lemon juice is infused to enhance a wonderful flavor of this side dish.
Ingredients:
1/2 lb maple bacon (chopped)
2 ears corn (yellow)
2 lbs fresh swiss chard (red chard)
1/2 cup shallot (chopped)
1 fresh garlic clove (chopped)
1 tablespoon lemon thyme (chopped)
2 tablespoons fresh lemon juice
1 teaspoon fine sea salt
2 teaspoons fresh ground black pepper
3 lemons (cut 2-lemons in wedges)
Directions:
1. In a large saute pan cook bacon until crisp. Chop bacon into bits and set aside. Remove all bacon grease from the pan except for 2 tablespoons.
2. Peel corn, wash and remove the silk. Cut corn off cob and place into a small bowl. Wash Red Swiss Chard, dry with paper towels. Chop lemon thyme and set aside.
3. Zest 1 lemon and extract juice place into a bowl.
4. Add bacon bits,corn, chopped shallots, chopped garlic and saute until garlic is soft.
5. Add Red Swiss Chard and fresh lemon thyme. Saute until chard starts to wilt. Add fresh lemon juice and saute for 1-2 minutes.
6. Season with fine sea salt and fresh ground pepper to taste.
7. Place the Red Swiss Chard on hot plates and serve.
8. Garnish with fresh lemon wedges.
