SAUTÉED SPINACH AND TOMATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mundey Estate in Haley Texas in 1992.
Ingredients:
1-1/2 pounds fresh spinach
2 large ripe tomatoes
2 tablespoons butter
1 garlic clove peeled
1 pinch freshly-grated nutmeg
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Remove stems of spinach and wash leaves thoroughly in cool water.
2. Drain well and let stand.
3. Core tomatoes then halve them and squeeze out seeds and cut tomatoes into small cubes.
4. In large skillet add butter, tomato and garlic then cook briefly over high heat while stirring.
5. Add spinach, nutmeg, salt and pepper then cook quickly until spinach is wilted.
6. Serve immediately.
